Our Global Cuisine Series looks at the foods of different cultures, through a hands-on exploration of the history, pantry, techniques, utensils, and signature dishes of a specific cuisine. The class will cook and enjoy a full family-style menu while learning how the locals eat all across the globe.
Explore Japanese food well beyond sushi. We will walk through the Japanese pantry, centered largely on market fresh ingredients, many of which you can find here in the Bay Area. We’ll explore homemade dashi, the base stock that is a staple in Japan. We will also create seafood, noodle, and vegetable dishes as we prepare a menu that teaches you the base techniques of Japanese cuisine.
Menu: Cool Soba Noodles with Soya dipping sauce, Sashimi of Fresh Fish with Sesame Spinach, Chicken Yakitori, Pork Tonkatsu, Vegetable Tempura, Quick Japanese Pickles, and Agedashi Tofu (Fried Tofu in Broth).
