Our Global Cuisine Series looks at the foods of different cultures, through a hands-on exploration of the history, pantry, techniques, utensils, and signature dishes of a specific cuisine. The class will cook and enjoy a full family-style menu while learning how the locals eat all across the globe.
Some of the most well loved dishes in Italy are also some of the easiest to make at home. This class will teach you about key items in the Italian pantry, the cooking techniques that honor those ingredients, and a menu of dishes that are easy to prepare at home. We’ll even share the secrets to crispy Saltimboca and creamy Polenta. The dishes you make all work well together but can also be added to your regular repertoire of home cooking to bring a little more Italian to your dinner table any night of the week.
Menu: Bruschetta with Cannellini Bean Puree and Fresh Herbs, Tortellini in Brodo, Veal Saltimboca, Mascarpone Polenta with Mushroom Ragu, Sautéed Spinach with Currants and Pine Nuts, and Homemade Cannoli with Orange Ricotta Filling.
