Chef demos by Chris Cosentino of Boccalone and Incanto and Stephen Pocock of Boccalone, Ryan Farr of 4505 Meats, plus Eric Magnani of Global Gourmet Catering. Talk by Doug Stonebreaker of Prather Ranch Meat Co. Then learn about the philosophy behind nose to tail pig roasts and see what will surely be your first vegan pig roast, using every part of a peach—from stem to pit with Yasmin Golan.

View scientific illustrations of pigs, both the wild and the farmed, from the Academy’s library archives and photographs from the Carl Austin Rietz Collection of Food Technology. And of course, prepare yourself for a round of Six Degrees of Kevin Bacon.
